The now- not-so-secret spice rub – the perfect complement to your Rational VarioSmoker

Smoked and nicely spicedRational´s new VarioSmoker allows chefs to smoke meat, fish and vegetables in the SelfCookingCenter 5 Senses, achieving a natural smoked flavour without having to buy a separate smoker oven.

Now, one of Rational’s chefs, located in Texas, has leaked a secret spice rub recipe designed to give smoked brisket, ribs or pulled pork that extra wow factor. The spice rub can also be used on other meat or on fish, poultry or vegetables.

Using the VarioSmoker is simple: all chefs have to do is fill its pan with wood chips or pellets, pop it on the upper shelf of the SelfCookingCenter and plug in the cable. Once it begins to smoke, load the spice-rubbed-produce, select the desired cooking process or programme and the combi does the rest.

The combination of the VarioSmoker and the SelfCookingCenter’s precise controls help chefs create the exact flavour and intensity of natural smoked food they require. Meanwhile, the VarioSmoker saves chefs time by cooking and smoking the food simultaneously.

Spice Rub Recipe

128g Cascabel chilli powder

128g Ancho chilli powder

128g Smoked paprika

32g Ground cumin

2 tbsp Ground coriander

2 tbsp Black Pepper

2 tbsp White Pepper

2 tbsp Ground cinnamon

22g Granulated Garlic

32g Onion Powder

2 tbsp Cayenne pepper

201g Sugar

96g Salt

Combine the ingredients and liberally rub onto meat, fish, poultry or even vegetables before popping into the smoke-ready Rational.
