Cooking fish is a delicate operation, it is easy to spoil. Accuracy, timing and cooking environment are essential elements for a perfectly cooked fish.
The Rational SelfCooking Center makes what is normally a difficult task simple and straightforward. At the touch of a button it can cook many different fish dishes, whether pan-fried, poached, steamed or baked – fully automatically and exactly how the chef wants it.
With the Rational SelfCooking Center there is no need for the fish to be continously monitored or turned. For example, when poaching or steaming the chef can simply select fish, steamed/poached and how well they’d like it cooked, then the Rational does the rest. The fish doesn’t need to be removed from the cooking liquid until it is ready to be served. The combi steamer monitors the food, automatically adjusting the temperature and cooking time if necessary.
The gentle cooking process of the Rational prevents fish from drying out and spoiling. It stops the fish from cooking too quickly, destroying the protein, so the chef can serve a better quality dish. It also means any herbs that are cooked with the fish remain green, fresh and retain their taste.
For bulk production the ‘continue’ function enables a constant flow of freshly cooked fish, to meet demand. This function also allows different sized dishes to be cooked at the same time. The Rational tells the chef once the smaller items are cooked and ready to be removed, the larger items can then be left in to continue cooking.
