Wiltshire pub installs new compact tabletop VarioCooking Center
The Angel Inn at Upton Scudamore is a hotel and restaurant based in the beautiful countryside of Wiltshire. It was recently refurbished in a blend of contemporary and traditional styles, with the same ideals informing the food served there. Head chef Adam Clayton uses local and seasonal produce to create a menu that combines modern cuisine and classic pub fare. As much as possible is made in house, including bread and mayonnaise, so the kitchen equipment needs to be reliable.
High volume Winterhalter flight machine works fast and saves energy, despite cold-water fill
Manchester Grammar School is the UK’s largest independent day school for boys. There are 1,600 pupils and 250 staff – which means catering is very busy indeed. Lunch is served from 12 noon till 2pm, during which time typically 1,000 meals will be served – including halal, vegetarian, gluten-free and dairy-free options. Plus, the school has an active events programme on week nights and at the weekend. (more…)
The FRIMA family will be out in force at Commercial Kitchen, The Catering Equipment Show, with three different models on the stand. The biggest is the 211+ floor-standing version and the smallest is the counter top 112T, while the newest is the counter top 112L.
These models will give visitors a great overview of the FRIMA range. The FRIMA VarioCooking Center is a modern, multifunctional cooking appliance that can replace kettles, large pots, bratt pans, fryers and griddles, saving 30% or more space in the kitchen. It’s super-fast too – four times faster than conventional cooking. For even speedier cooking the 211+ has a pressure cooking feature that can cut cooking times for products such as casseroles, soups and stocks by 50% or more.
Fast, reliable microwave ovens help popular seaside diner cope with demand
It may look like the archetypical sleepy seaside town, but Wells-Next-The-Sea in North Norfolk has seen its fair share of dramatic events over the years. Early in December 2013, the town was hit by the largest storm surge in decades. Kay Gelder, owner of K’s Burger Bar based right next to the quayside, had to act fast. “We were told to move all our equipment to the rear of the shop, but in the end that’s where the floodwater came in.”
Luckily not everything was destroyed, with the diner’s Samsung commercial microwave ovens amongst the equipment that survived. While not having to replace such key pieces of equipment was one less thing to worry about, the size of the task facing them proved daunting.
Lee Hall to work with distributors to increase CookingLive demo sites
FRIMA UK has expanded its sales team with the appointment of Lee Hall as Regional Sales Manager for the East Midlands and East Anglia.
Lee is an experienced chef – he started in kitchens at the tender age of 14 and subsequently worked in a variety of venues including gastro pubs, five star hotels and spas. He’s also an experienced foodservice sales professional whose previous companies include MKG Foods and Corkers Crisps, where he controlled the UK wholesale division, working with multiple foodservice operators and major retailers such as WH Smith and Amazon.
“I’m thrilled to be working with such a well-known and respected manufacturer of catering equipment,” he says. “Being at the cutting edge of cooking technology is really exciting – working with a range of equipment that brings genuine, clear benefits to caterers’ businesses, especially in terms of reducing time and costs, compared to traditional appliances.”
Innovative designs keep ingredients safe, whatever the temperature
Franco Manca’s sourdough pizzas are regularly voted the best in Britain and the group recently won best run chain with under twenty outlets in the UK. So what’s the secret? Nabil Mankarious, managing director, says it’s a combination of factors – including attention to detail, great quality food at great value, and close relationships with suppliers.
“My business partner David Page and I have been in catering since 1987,” he says. “We stick with suppliers who give us quality, consistency and reliability and who are prepared to go out of their way when we need them to.”

College’s VarioCooking Center is also brilliant for making more of cheaper cuts
With over 15,000 students and 1,000 staff, catering at Bridgwater College in Somerset is a busy business. There is a variety of catering outlets, including restaurants, coffee shops and The Zone, a Subway-style eatery. Together they serve around a million meals a year. The catering is not subsidised and all food is cooked from fresh – right down to the curry sauce.
Given such a combination of demand and diversity, catering equipment needs to be both multipurpose and productive. Recently the College installed a FRIMA VarioCooking Center Multificiency which, says Executive Chef Scott Pring, “Is one of the most versatile pieces of kit in the kitchens. We wouldn’t be without it now.”

British manufacturer applauds ‘one stop BIM shop’
British refrigeration manufacturer Precision has joined the CESABIM database. Dealers, designers and consultants will find all the company’s products listed there, ready for download in IFC format and fully compatible with all major BIM software packages.
“We recently completed a significant upgrade on our products and wanted to ensure the CESABIM database had all the very latest information,” says Nick Williams, managing director of Precision. “We are very supportive of the CESABIM initiative – having a ‘one stop BIM shop’ for catering equipment has to be helpful for designers and specifiers.”
