New appointment will help Falcon to enhance customer service
Falcon Foodservice has announced that Shaune Hall will be joining the company as Development Chef, taking over from Neil Roseweir, who is retiring.
Born and raised in South Africa, Shaune has many years of experience in the industry. Most recently he has been Head Chef Trainer at Forth Valley College in Stirling, where he was responsible for work-based apprenticeship programmes as well as managing the operations of the college’s catering unit. Falcon’s F900 Rise and Fall Grill combines great performance and efficiency
Falcon’s latest product offering is the F900 Rise and Fall Grill (model E600). Part of Falcon’s new F900 Series, it combines functionality with built-in energy and cost savings.
The F900 Rise and Fall Grill is very energy efficient as it uses automatic plate sensing technology to only activate the heat source when the tray is placed into the unit, just like induction. The grill’s powerful infrared elements ensure instant heat-up and precise temperature control, which also saves energy, as well as time. Even cooking is achieved with the middle of three elements turning off for 8 seconds after 25 seconds of all three being on full power. This delivers a consistent heat across the entire tray as well as adding to the overall energy efficiency. (more…)
Super Caley’s Falcon Kit and Williams Fridges Sort It
With 17,000 students, catering at Glasgow’s Caledonian University is a huge operation. The brand new main restaurant is part of a major rebuild, The Heart of the Campus project. “It’s called The Heart partly because it’s right in the middle of the campus,” says head of catering, Frank McCabe, “but also because it’s built round leafy courtyards where customers can relax in the fresh air – and because it’s designed to inspire social gatherings.” At the heart of any catering operation is the kitchen – and the heart of The Heart is built around cooking equipment from Falcon and refrigeration from Williams.
“The restaurant reflects the rich ethnic mix of students here,” says Frank. “It’s essentially a food hall with a wide variety of different offerings, many cooked live – it’s great theatre. So we have everything from salad bars to sushi counters to soup stations, burgers on the flame grill, pizzas, a soup station, deli bars, fresh fruit, grab & go merchandisers…” (more…)
If you’re lucky enough to be in Bridge of Allan, Stirling, then the place to go is Jam Jar. This contemporary café restaurant, open from 8am till 10pm, is, in the words of head chef Izzy Kerr, “really, really busy.” They serve up to 2,500 covers a week and Izzy describes the food as “modern British bistro,” but there are distinctive and popular flourishes. For example, Jam Jar’s latest version of a steak sandwichis based on braised beef brisket cooked in its own liquor, and it goes down a storm.
As this is Stirling it’s also Falcon Foodservice Equipment country, which is lucky since Izzy is a big fan of the British manufacturer. When the company was developing its F900 Series Izzy was delighted to be asked to field trial several of the new appliances – especially as Jam Jar was in the process of a kitchen refurbishment. Top British manufacturers supply equipment for live cookery competition at this year’s Hotelympia
Falcon Foodservice and Williams Refrigeration will be supplying equipment for Hotelympia’s International Salon Culinaire competition this year.
Salon Culinaire is the largest and most prestigious chef competition programme in the UK. This year’s contest features 80 classes within four categories, and once again celebrates the skills of the UK’s hospitality industry.
For more than ten years, the organisers of the Live Theatre competition have chosen equipment from Falcon and Williams. These are timed cookery challenges, with the added pressure of a live audience watching every move. With competition at this level it’s vital that the equipment available to competitors performs well under pressure. (more…)
