The Institute of Directors installs Winterhalter MTR rack warewasher

The Institute of Directors finds warewashing better, easier and more energy-saving with latest Winterhalter rack system

Winterhalter at the IoDOne of the world’s great business organisations, the Institute of Directors, has upgraded the warewashing facilities at its prestigious Pall Mall headquarters in the heart of London’s clubland.

Determined to make the most of modern technology, the Institute has opted for the world’s most advanced large-scale warewasher: the Winterhalter MTR multi-tank rack machine.

The Institute of Directors is an important oasis for UK Directors in London. With a large restaurant and Brasserie, seven function suites, 32 meeting rooms, business lounges and even an internet cafe, it’s the place where many of the world’s leading business people meet when they want superb hospitality. On a typical weekday 1,500 members and guests can be served.

Add wedding receptions, banquets, press launches and awards ceremonies, and with top quality Villeroy & Boch crockery used throughout, it’s a real test for the science of warewashing.

Roger Evans has been the IoD’s Executive Chef for 20 years. But for all the changes in catering during that time, one thing that hasn’t changed is that its members and guests expect the best. And he, in turn, demands the best from his suppliers.

After many years of relying on an older Winterhalter flight machine for the bulk of his dishwashing, he realised technology had moved on.

“We’ve used Winterhalter for quite a few years now,” he says. “They’ve given us a superb wash and they’ve proved reliable. In my experience, cheaper dishwashers don’t wash as well – or last as long.

“I need to keep energy and running costs down, and the new MTR model offers big savings on that as well as giving loads of other benefits. It’s much easier to operate and clean, for example.”

The IoD occupies a historic Grade 1 listed building where installing extra ventilation could be a problem. However, the MTR’s new exhaust air heat recovery system – which extracts the heat of the exhaust air to pre-heat incoming water – has eliminated the need for more ventilation.   Indeed, upon installing the new MTR, Winterhalter was even able to remove a vent required by the previous dishwasher.

The new machine has also reduced the amount of work needed by the staff, freeing them for other duties.   For example, it not only automatically cleans itself but also adjusts the rinse temperature, adjusts the wash pressure, turns itself off when empty and even automatically starts itself for the next morning’s shift.

Roger Evans is especially impressed with how hygienic the MTR is in action. “I insist on a dishwasher being cleaned three times a day, and the latest Winterhalter models even clean themselves,” he says.

Winterhalter provides a total solution for warewashing, from pre-sales advice to after-sales service, training and maintenance. Alongside its market-leading dish and glasswashers, the company’s range includes utensil washers, advanced water treatment machines, cleaning chemicals and detergents.  For further details, call Winterhalter on 01908 359000, see www.winterhalter.co.uk, or www.winterhalter-scout.biz or email info@winterhalter.co.uk.

Notes for editors

Winterhalter’s MT conveyor dishwashers use less energy and water than previous generations of high volume warewashers – and they have lower running costs. And there’s another benefit: staff comfort.  Less waste heat and steam radiate into the wash area, so working conditions are better (and the need for expensive ventilation is reduced).

MT machines are available in both rack and flight models. They are designed to wash continuously, processing thousands of pieces per hour – making them ideal for all high volume catering.

Winterhalter introduced a raft of resource-saving technologies for the MT range, including an innovative three-temperature rinse zone that cuts power consumption significantly. Energy recovery systems include a heat exchanger and exhaust heat recovery, or an optional heat pump to save even more power by recycling heat. In many cases it can make working conditions even more comfortable by actually cooling the warewash area. Meanwhile double-wall insulation reduces the heat loss, while the pumps and air blowers have smart controls that only switch on when necessary.

Capable of washing up to two plate racks a minute, the MTR not only washes perfectly, but also slashes the running costs of warewashing while protecting the IoD’s delicate and costly dishes.
