Getting the cleanest cutlery with the UC Excellence-iPlus

How Winterhalter solved the problem of guaranteeing clean cutlery first time

With time being a constant pressure in catering and foodservice operations, anything that helps to speed up the work is a huge welcome. Winterhalter combined a range of technical innovations for its Undercounter Excellence-iPlus warewasher to ensure cutlery comes out perfectly clean, requiring no additional polishing and ready to use straight away.

Guaranteeing cutlery gets cleaned to this level time after time requires a delicate balance of wash power, rinsing and reverse osmosis, combined with the right chemicals and specially designed racks to ensure cutlery is kept in the right position.

Winterhalter’s UC series can be configured to provide the optimum cleaning for dishes, glasses or cutlery. By adjusting the water pressure it can be used to clean delicate and sturdier items, at a variety of levels of soiling, without damage. The s-shaped wash arm of the Excellence-iPlus features optimised water flow thanks to the nozzle geometry, distributing water evenly across the racks. The wash arm reduces water consumption by up to 25%, which in turn reduces both energy and chemical consumption.

The plastic-coated wire racks feature nine containers that keep the cutlery in a vertical position throughout the washing process, with each rack holding 120 pieces. A four stage filtration system removes even the finest particles from the water, reducing how often it needs to be changed while increasing its cleaning power. The UC Excellence-iPlus can also be fitted with a hybrid water treatment system that offers both reverse osmosis filtration and a standard water softening system.

Reverse osmosis removes minerals like calcium and magnesium which can cause streaks on cutlery as it dries, delivering the best possible cleaning results.  RO water gives the UC Excellence-iPlus the ability to clean cutlery perfectly, and means items are ready for use straight out of the machine with no need for additional and time consuming hand polishing.

Winterhalter offers specially designed cleaning chemicals specifically for use on common cutlery materials such as stainless steel and silver, as well as a rinse aid that helps to optimise the drying process.

Controlled via a simple to use touchscreen panel, staff simply select the right program from a list of clear, language neutral icons and the machine does the rest. Certified to DIN SPEC 10534, the machine guarantees hygienic and virus-free cleaning. The system can also inform operators when it’s time to change the water, and thanks to Winterhalter’s ConnectedWash, all operational data can be recorded and accessed remotely via PC, tablet or smartphone.
