‘Most sustainable yet’ SelfCookingCenter® whitefficiency® cooks better, faster, using less energy

The sustainable kitchen of the future is unveiled at Restaurant on stand F20, where Rational shows how its SelfCookingCenter whitefficiency delivers better food using less energy and fewer resources than previous models.  The company will also be highlighting its flexibility – not only in terms of the vast menu of different foods it can prepare, but also in its ability to match its controls to the skills of the person operating it, from the three star Michelin chef to the unskilled novice. 

Rational is joined on the stand by three other companies demonstrating sustainable technologies for the restaurateur.  They are Adande Refrigeration, Charvet and MCS Induction.

The latest version of Rationals’ SelfCookingCenter is the most sustainable yet.  It uses new technologies to cut energy consumption by up to 20%, increase capacity by up to 30% and reduce production times by as much as 30%, compared to previous models.   Its HiDensityControl feature means that every item, from the front of the top shelf to the back of the bottom shelf, is cooked identically, with absolutely consistent quality.  Meanwhile Efficient LevelControl (ELC) makes it easy to cook different foods at the same time, in the same unit, to the same high quality.

Rational adds to its sustainability credentials with CareControl.  This feature means that, unlike with other combi steamers, there’s no need to fit an external water treatment system to protect the unit – because CareControl takes care of limescale before it can build up.  Eliminating the need to service a water treatment system cuts the cost of owning a combi by hundreds of pounds per year.  In addition, CareControl detects the level of soiling and tells users to clean the unit, but only when it is necessary.  This minimises the use of energy, water and chemicals used for cleaning.

The SelfCookingCenter whitefficiency control panel makes operating the new combi steamer brilliantly simple because it constantly learns and automatically adjusts to the habits of the individual user.  Meanwhile the ‘MySCC’ feature allows the display to be tailored to suit the user, with bespoke menu photos and graphics.  In addition, any functions that are not needed can simply be removed from the display interface, keeping controls simple and eliminating operator error, even with untrained staff.
