French fries from the Rational can contain 80% less fat and 36% fewer calories than their deep-fried counterparts.  To make it possible for chefs to prepare pre-fried chips without the need for oil, Rational has designed the CombiFry – a wire basket with a wavy base that ensures the chips lie randomly and cook without sticking.

The CombiFry makes cooking chips fast too: it holds up to 1kg so caterers can cook 200 portions of chips in just 15 minutes. The CombiFry is also suitable for all sorts of pre-fried products including onion rings and spring rolls.

What’s more the Rational SelfCooking Center cleans and descales itself at the end of the day – but only when it needs it.  All new Rationals are fitted with CareControl which constantly monitors the cooking processes and alerts staff when cleaning is necessary. At that point all staff have to do is pop in a couple of special cleaning tabs, switch on the cleaning cycle and the SelfCooking Center does the rest.
