Tandoori accessory

Rational has launched an accessory that allows the SelfCooking Center to mimic the cooking characteristics of a tandoori oven.  Now chefs can easily prepare classic ethnic recipes, such as chicken tikka, in their combi steamer.  The new Tandoori Pan comprises a special rack and a series of locking skewers.

The new pan works in combination with the SelfCooking Center’s sophisticated controls, which can be set to replicate the climate inside the traditional tandoori oven.  As well as being easy to load, safe and energy efficient, the SelfCooking Center is fast.  The biggest model, the forty-grid SCC202, can cook up to 100 skewers of chicken tikka in just twelve minutes.  The smallest model, the six-grid SCC601, will hold up to thirty.

Despite its name, the Tandoori Pan is not just for tandoori recipes.  “We developed it following requests from customers cooking Indian cuisine,” says Ian Ring of Rational UK.  “However, in most cultures, grilled or roasted foods on skewers are an important part of the menu. Our aim was to develop a versatile accessory that would allow larger quantities to be prepared easily and to a very high quality.

“Users simply load up the skewers and select the appropriate programme for the type of cuisine they are replicating – they make great shish kebabs, for example.”

The shape of the pan’s frame ensures that each individual skewer can be securely fixed in place, enabling loaded pans to be moved safely. The skewers are available in five different widths and versions (round, square or flat), so they are suitable for all types of food – meat, fish and vegetables. Both frames and skewers are made from high-quality stainless steel and are dishwasher-safe.
