FEM now supplying Pratica’s latest rapid cook pizza oven
Foodservice Equipment Marketing (FEM) are now supplying the Pratica Forza STi Fast Stackable Pizza Oven. This is designed to provide a rapid and compact method of preparing pizzas and other baked goods.
It incorporates microwave and impinged air heating technologies that allow it to achieve cook times up to 50% faster than conventional ovens, with precisely controlled heat distribution and inbuilt sensors ensuring consistent results. The cook chamber can hold a pizza with a maximum diameter of 40cm, with the temperature able to be set anywhere up to 330°C.
Constructed from stainless steel, the oven features a clear modern design with a clear glass door and interior lighting. This makes it easy for staff to monitor the progress of the cooking as well as creating a visually appealing display when installed front of house. Powerful heat insulation and a removable catalytic converter filter reduce heat and odour release into the surrounding area, helping to make a safer and more pleasant environment for both staff and customers. This also means it can operate without an external vent or hood. The removable converter can be cleaned by staff, rather than needing a maintenance call out, helping to save time and money.
The oven is controlled through a simple, full colour touchscreen interface. It can store an unlimited number of recipes, with multiple steps, as well as user defined icons or photographs, so you can tailor to your menu items. Recipes can be created or updated directly on the oven or remotely using the Pratica IoK Platform allowing you to standardise your production and keep track of your ovens even when you are out of your kitchen, or via a USB stick.
The oven measures just 075mm wide by 788mm deep by 340mm high, and two units can be stacked together, allowing for output to be doubled while maintaining the same compact footprint. The oven has a power rating of 6.6kw and is supplied with a 32 Amp single phase blue commando plug.
Each oven comes with a selection of accessories, including a 16″ pizza screen, an aluminium paddle, a door cleaning tool, as well as one bottle of oven cleaner and one bottle of oven guard. The oven can also be supplied with adjustable feet as an optional extra. It is supplied without feet as standard.
