New fish storage cabinet designed for the popular Jade line
Williams Refrigeration has launched a new model in its popular Jade range specifically designed to provide high quality storage for fish.
Storing fish in peak condition requires precise temperature control. Fish proteins are more delicate than many meats and if not stored correctly it can affect the taste and texture, and could allow dangerous bacteria to grow. Furthermore, if the temperature is too high fish releases ammonia, which could damage the refrigerator over time.
The new Jade J1 Fish cabinet is designed to store fish at its optimal temperature range of -2 to +2°C. It is constructed from foodsafe, ammonia-resistant stainless steel inside and out to withstand the corrosive effects of ammonia and the heavier loads associated with storing wet, raw fish.
Each cabinet is fitted with sixteen fixed trayslides (eight per side), sturdy enough to hold the weight of fish and is supplied with eight 2x1GN 100mm pans, complete with slime trays. These fit in the bottom of the pans to ensure fish does not sit in any residual liquids they expel. The cabinet features a base mounted standard waste drain that allows it to be connected to the main drain.
The refrigeration system is controlled by the latest version of Williams’ CoolSmart controller, which uses highly accurate sensors to maintain consistent temperatures within the operating range. Defrost water is evaporated using waste heat from the condenser, helping to reduce energy consumption.
Maintaining high hygiene standards is essential when storing fresh fish. The Jade Fish cabinet has a number of features designed to make it easy to clean, including radiused interior corners and a removable racking system that helps reduce debris buildup and simplify washdown. Heavy duty, non marking castors also allow the unit to be moved for easy cleaning access.
The self-closing, barrel locked door features magnetic balloon gaskets for a 100% tight seal, with 80mm high density precision injected polyurethane insulation ensuring temperature stability. The unit is rated Climate Class 5, so it can operate in the toughest of kitchen environments in up to 43°C ambient conditions.
Its external dimensions are 727mm (w), 824mm (d) and 1960mm (h) and the Jade Fish has a total internal capacity of 620 litres. A left hand door opening is available as an option if required. It’s designed to be installed in a variety of locations, and is a hygienic and adaptable choice for the safe storage of fish.
