Alto-Shaam heated holding cabinets from FEM

Heated holding cabinets enable food to be pre-cooked offsite or cooked in advance and then held at a safe, serving temperature. Foodservice Equipment Marketing (FEM) now supplies Alto-Shaam heated holding cabinets, in a variety of sizes and configurations.

Alto-Shaam heated holding cabinets use a special controlled, uniform heating system called Halo Heat. Halo Heat gently surrounds the food and heats and holds it at the ideal serving temperature, preventing it from drying out and so retaining the food’s quality, flavour and appearance. Halo Heat also prolongs the holding time of the food,
meaning food can be prepared further in advance, subject to food safety requirements, and still be delivered to the customer piping hot and in perfect condition.

The holding cabinets can be used with all types of food, from meat, poultry and fish to potatoes, vegetables and even casseroles.

An on/off, adjustable thermostat and temperature gauge ensures precise control over the cabinet’s internal temperature. Straightforward, push-button manual control, digital display and intuitive design make for easy operation and reduce the need for staff training.

The cabinets have corrosion-resistant stainless steel interiors, ideal for heavy-duty use, and integral castors for easy manoeuvrability. They can be stacked together or with an Alto-Shaam cook/hold oven to save on space.

The units are available in different sizes ranging from 18kg to 174kg capacity. They are also available with a number of additional factory-installed options such as electronic control, electronic multi-timer, window door and pass-through design. Accessories are available from FEM.
