Overlooking the mouth of the Exe estuary, Lympstone Manor is a Grade-2 listed Georgian manor house that has been transformed into a refined, contemporary hotel and restaurant by owner, Michael Caines MBE. One of Britain’s most celebrated chefs, Michael’s career has seen him hold two Michelin stars for eighteen consecutive years at Gidleigh Park.

Ingenuity, internationalisation and a focus on the future
Winterhalter, the warewashing specialist based in Meckenbeuren, Germany, is celebrating its 70th anniversary in 2017. For three generations this family-run company has stood for quality and reliability in the kitchen, and over the last 70 years it has led the market with its technical innovations.
The company was founded in 1947 by Karl Winterhalter, whose first big seller was the Backhexe (baking wizard), a portable electric oven. The development of the first dishwashers took place in the family home, with a garden shed used as the workshop. Jürgen Winterhalter, son of the company founder and current joint CEO of the Winterhalter Group, remembers the testing process: “My mother used to rub plates with spinach and leave them to dry in the sun. Then we’d wash them in the machine, and they actually ended up clean. It fascinated me.” The company’s success story had begun and the GS 60 dishwasher was launched in 1959. “My father’s message to restaurants was, ‘you can have clean dishes in the shortest possible time’ – and they loved it!” says Jürgen. The popularity of the Winterhalter dishwashers led to mass production and the eventual development of additional manufacturing plants in Endingen (Germany) and Rüthi (Switzerland). (more…)
Kieran Lynch joins as managing director of expanding service operation
Winterhalter UK is to relaunch its service operation as a separate division within the company. The move is part of Winterhalter’s plans to expand its service operation into new areas, whilst continuing to provide first class national coverage to existing warewash customers.
As a key part of the initiative, Winterhalter has appointed a managing director, Kieran Lynch, for the service division. He will also join the board of Winterhalter UK. (more…)
Winterhalter’s UC machines with thermal disinfection programme available with Pay Per Wash
For care homes, sanitisation is an essential. Winterhalter’s UC undercounter machines are available with a thermal disinfection option – and care homes can now install them under the Pay Per Wash initiative, which means there’s no upfront cost, operators simply pay for each wash as they go along.
The UC is a front-loading machine that’s available in four different sizes, small, medium, large and extra-large. The thermal disinfection wash cycle meets the HMT2030 regulations by washing at 73ºC for 3 minutes, delivering total hygiene control. Using this wash programme, the UC can handle up to 10 racks per hour, with the racks ranging in size from 400x400mm in the small model to 500x540mm in the extra-large. When the thermal disinfection programme is not required, the UC can handle up to 48 racks per hour. Its compact size means it can fit into small kitchens, while its high output means it can wash quickly and effectively. (more…)

Airedale sources, delivers and installs warewasher in under 24 hours
Installing a restaurant kitchen in Heathrow is a complex business – especially if it’s ‘airside’. The Commission by Drake & Morgan is a new, 175-seater restaurant and cocktail bar operated by hospitality and food service company Delaware North and sited in Terminal 4. For the Airedale Group, who managed the project, the complexity was somewhat aggravated by the fact that the install period was cut from ten days to three, due to building delays. The situation got even worse when, on day three, at the 11th hour, suddenly a new dishwasher had to be sourced and installed. (more…)

The 2017 KP of the Year Awards have been launched and the search is on for the best kitchen porter in the land. The awards are the brainchild of Winterhalter, the market leader in commercial warewashers. Managing director Stephen Kinkead is encouraging entrants from all sectors of the industry. “In previous years we’ve had entries from schools, stadia and snack bars, pubs and prisons, hotels and hospitals, restaurants and residential homes, barracks and banquet caterers… even the Houses of Parliament,” he says. “Everyone’s a winner, as every entrant receives a presentation tin containing a special KP apron.” (more…)
