FEM add the upgraded range of Pujadas charcoal ovens and wood chips for perfect charcoal cooking

Redesigned Pujadas charcoal ovens are now available to the UK market from FEM. The distinctive flavour and popularity of charcoal cooking come from the juice of the food itself permeating the hot coals, creating aromatic particles and enveloping the food in smoke.  Pujadas charcoal ovens make this type of cooking available year-round, come rain or shine.  It is suitable for meat, fish, seafood, vegetables, rice, pizza, desserts, pastries, and much more.

The Inox stainless steel charcoal ovens are available in three sizes, 30kg, which is suitable for 40-50 diners, 70kg, suitable for 80-90 diners or 100kg, suitable for 130-140 diners. The 30kg oven measures 700mm wide by 555mm deep by 620mm high, and the 70kg also has a width of 700mm, but a depth of 655mm and a height of 720mm.  The 100kg model is the largest in the range measuring 890mm wide by 840mm deep by 880mm high.

The design of the inner chamber favours air recirculation, ensuring homogeneous distribution of heat and optimum performance of the combustible material while the cooking temperature is controlled by regulating the flow of air entering the oven. The working range of temperatures is between 250°C to 350°C, and because the grill is enclosed it is perfect for both indoor and outdoor use. Using charcoal or wood chips in this way, instead of using gas or electricity, is not only cheaper but also cooks items 40% faster than conventional chargrills.

In the new and improved design the iron door and chamber have been replaced with stronger stainless steel providing greater endurance and reinforcements inside the oven door improve robustness and avoid deformation. The thermometer is now located at the bottom of the oven providing more accurate temperatures and greater protection. The airflow regulator has been fitted with a spring system and numerical position indicator.

To perfect the cooking and enhance the flavour, FEM supplies a range of quality wood chips specially made by Pujadas for the Inox charcoal ovens. There are whiskey oak wood and fine oak wood chips available in 2kg boxes and plain oak chips in 4kg boxes. There are also 10kg charcoal mix bags; these contain course-grained, dust-free charcoal made from a mixture of lump wood and broken charcoal pieces.

Charcoal ovens must be supplied with the hat filter, external cutter flame and airflow regulator if they are not going to be extracted via a dedicated exhaust pipe.

Each oven comes with a stainless steel grill, a set of tongs, an ash shovel, a charcoal poker, and a metal cleaning brush. Stronger and more durable accessories are also available including stationary and mobile tables.  There are also new stainless steel hot plate accessories specifically designed for use with the Inox charcoal oven, these keep dishes warm before service and temper ingredients before cooking, which is highly recommended for meat preparation.
