Rational at Restaurant & Takeaway Expo 2018

At the 2018 Expo Rational will focus on using the latest cooking technology to get maximum production capacity out of the tightest kitchen space.  On show will be Rational’s smallest combi oven – the SelfCookingCenter XS – alongside the company’s compact 112 VarioCookingCenter.  Together they provide every cooking process a commercial kitchen could require, yet take up minimal room.  Plus they are fast, deliver superb results and are easy to clean.

The SelfCookingCenter XS has a footprint of just 555mm deep and 655mm wide, yet it can roast 12 chickens in just 35 minutes.  As well as roasting it can fry, grill, steam, poach, bake, and much more.

The VarioCookingCenter takes multifunctional cooking to a new level.  The 112 is a twin-pan model that measures just 1,224mm wide by 777mm deep, yet it can replace griddles, kettles, bratt pans, large pots and fryers and can be used to fry, deep fry, boil and confit.  Despite its size, the 112 can cook 60 hamburgers per pan per hour, for example.

Both appliances use the market’s most advanced automatic controls, so chefs don’t need to monitor the cooking – instead they can get on with other jobs, safe in the knowledge that the food will be cooked perfectly.

Chefs will be cooking live on stand with the SelfCookingCenter XS and the VarioCookingCenter 112 throughout the show, so visitors can see just how fast and efficient they are.  Visitors will also be able to see the latest version of the ConnectedCooking technology, which allows users to monitor and programme Rational appliances remotely via the internet.  It can be used with individual units or multiple appliances across an estate so that, for example, a chef can change a recipe in all a group’s Rational combi ovens simultaneously, ensuring consistency in every site.
