Now FEM (Foodservice Equipment Marketing) has launched Alto-Shaam’s Electric Rotisserie (AR-7E), which cooks faster and more evenly than conventional rotisseries. Its optional ventless hood means it can go almost anywhere, making it a good choice for an impressive front-of-house display piece.

The Alto-Shaam Rotisserie features EcoSmart technology that enables it to use very little electricity to cook a full load of delicious food. It consumes up to 30% less energy than competitors’ models and uses a combination of convection and radiant heat to cook up to 28 1.5kg chickens on 7 skewers.

A clear, easy to read LED display allows operators to monitor the cooking time and temperature. The seven programme memory stores cooking and holding times, as well as temperatures, ensuring consistent results every time. The rotisserie wheel and skewers completely disassemble for simple cleanup.

Once the chickens are cooked the theatre continues as the dual temperature setting automatically switches to hold mode. The single pane Rotisserie without hood measures just 1095mm (w) x 815mm (d) x 1022mm (h) and can be stacked with another rotisserie oven or with the matching Hot Holding Rotisserie Companion.

The Hot Holding Rotisserie Companion uses Halo Heat, a controlled, uniform heat source to gently surround the food for better appearance, taste and a longer holding life. The cabinet allows a wide variety of food to be stored at the ideal serving temperature and displayed to customers.
