Space available in commercial kitchens for cooking equipment varies considerably but the demand for greater cooking capacity is probably universal. Rational’s Model 62 SelfCooking Center has been developed to offer increased cooking capacity without requiring extra height.
The SelfCooking Center introduces fully automatic cooking processes into the kitchen freeing up staff to concentrate on prepping, finishing and planning menus. It takes the guesswork out of cooking and introduces a precision that benefits all aspects of the operation.
With a footprint of 971mm x 1,069mm, the generous cooking cavity in the 62 can hold 6 x 2/1 gastronorm pans while still being the same height as a standard six grid model. This means it can cook between 60 to 160 meals per day and all at the touch of a button.
Throughout the cooking time, it monitors and optimises all cooking processes such as baking, roasting, grilling, steaming, braising, blanching and poaching, so each dish turns out exactly as it should. As well as producing perfect results, it uses only as much power as is needed to cook the food –saving 60% of energy compared to traditional cooking equipment. The SelfCooking Center reduces shrinkage on meats, produces perfect pastries, proves and bakes bread, fries eggs and even cooks chips.
As with all new SelfCooking Centers, the Model 62 is fitted with Rational’s labour-saving CareControl system. CareControl keeps an eye on how dirty the cooking cavity is getting and indicates when it needs cleaning. At that point all the operator has to do is pop in a couple of special cleaning tablets and the SelfCooking Center does the rest.
CareControl not only cleans, it also does away with all the limescale problems so the steam generator is always operating at optimum efficiency, which saves in running costs. There are further reductions in running and maintenance costs as there’s no need for a bulky water filter.
