Set the SelfCooking Center to ‘Finishing’ mode and it will be able to regenerate a meal in as little as eight minutes. However, ‘Finishing’ is much more than simple regeneration. The SelfCooking Center ensures that the food is ‘finished’ in its ideal cooking climate – the balance of dry and wet heat – so that there’s no condensation, over- or under-cooking, or drying out. The food comes out perfectly, as good or better than freshly cooked – whether it’s an a la carte order for one or a banquet for 400.

There’s a host of other technologies incorporated into the SelfCooking Center to make Christmas easier. For example, the overnight cooking mode lets chef slow-roast meat overnight. It saves time, because the work is done overnight when the rest of the kitchen is asleep, and the slow cooking creates superbly succulent meats with virtually no shrinkage at all. In other words, the food not only tastes better but it also goes further, making more portions for those festive feasts.

Ensuring the roast is succulent is especially important at Christmas, when caterers are preparing turkey, which has a reputation for being one of the driest meats.

At busy periods like Christmas it’s often necessary to take on extra staff. The SelfCooking Center helps here, too, as even unskilled staff can cook dishes perfectly in the SelfCooking Center. All they need do is select the food to be cooked – meat, fish, vegetables, bread, Christmas pud, whatever – and push the button. The Rational decides on the best way to cook the food, and for how long, and even adapts the process if there’s an interruption – for example, if someone opens the cabinet door.

At the end of a busy Christmas shift the last thing kitchen staff want to do is clean down the combi – and with the SelfCooking Center there’s no need, as it cleans itself.
