HB13G Bains Marie Hot Cupboard from Moffat Although a very basic piece of catering kit, a hot cupboard can make all the difference to the quality of a meal. No matter how carefully food is prepared and cooked, if it isn’t stored at the correct temperature prior to serving, it won’t reach the customer it tip-top condition.

E & R Moffat has designed a range of hot cupboards with bains marie fitted with forced-air heating and recirculation. The forced-air gives even heat distribution throughout the warming cavity, with no hot spots. Rodded shelves further enable good air circulation around the dishes. This means all food is kept at the same temperature, no matter where it is loaded within the cupboard.

The forced-air heating also speeds heat-up times and increases energy efficiency. In the electric models the bains marie well is suitable for wet or dry heat, being powered by solid state elements with independent variable control.

Constructed from stainless steel for good looks, ease of use and durability, the sliding doors lift off for easy cleaning and maintenance while the shelves are on heavy-duty supports for stability and safety.

Static units have height-adjustable steel legs for stability. Mobile units have handles at both ends and four all-swivel castors for manoeuvrability. Once wheeled into place, two of the castors can be securely braked to ensure the safety of both operator and customer.

Available in gas or electric versions, all are compatible with gastronorm containers. Door locks can be added on request.
