Sticky toffee pudding with fudge sauce – an eleven minute wonder

Cooking in a commercial microwave oven is a speedy way to offer freshly-cooked puds

Hot desserts are popular year round but especially though the winter months and if they can be billed as freshly cooked they can become a premium menu item. Sticky toffee pudding with hot fudge sauce is a sure-fire winner. Most kitchens have a commercial microwave but many don’t use them to their full potential. Not only is cooking the pudding in the microwave very fast, it’s also extremely easy. All the chef needs to do is mix together all the ingredients for the sponge – soaked dates, butter, brown sugar, eggs, self-raising flour, bicarbonate of soda, ginger, nutmeg and vanilla essence – pour into a container, cover with greaseproof paper and microwave for six to seven minutes until a skewer or sharp knife inserted into the centre comes out clean. The sponge can then be covered and left to stand while the sauce is prepared. For easy portioning it can be made in a 23 cm square microwaveable dish.

To cook the sauce, blend cornflour with a little cream and add brown sugar, butter and more cream. Microwave for about 4 minutes, stir halfway through the cooking time and again at the end. All the chef needs to do now is cut the pudding into portions, pour over the sauce and serve.
