Expert Rational chefs will show visitors how the new SelfCookingCenter combi steamer can cook everything from pizza to chips, from burgers to noodles – all at the touch of a button with perfect results. Also, visitors will get a chance to taste everything that is cooked to experience the superior cooking quality of the new Rational.
The new SelfCookingCenter 5 Senses is the first intelligent commercial cooking appliance that actually interacts with chefs, getting to know the way they work so that together, the chef and their combi can always deliver the best possible cooking results.
Rational’s new combi features interactive cooking control technology, called iCookingControl. This ensures food is prepared exactly the way the chef wants, by monitoring, controlling and adjusting temperature, time, air speed and the cooking climate – that is the balance of dry heat and steam. iCookingControl enables chefs to get the ideal climate for cooking traditional dishes, such as crisp yet succulent Peking Duck.
Perfect for cooking a range of takeaway items at the same time, the Rational’s iLevelControl makes cooking mixed loads easy and foolproof. It shows staff which foods can be cooked at the same time and automatically adjusts the cooking time for each shelf, according to various factors such as the amount of food loaded and how long the door is opened during the cooking process. It also ensures each food is prepared using the chef’s preferred specifications and cooking methods. For example, different noodle dishes can be prepared at the same time, making the unit superior to the traditional Chinese steamer.
The combi also features pre-programmed intelligent cooking processes for several favourite dishes. The ideal cooking climate, level of browning and other factors are programmed in so all chefs have to do is push the button and the SelfCookingCenter does the rest. No supervision or checking is necessary.Other processes can be pre-programmed by the chef so that even unskilled staff can replicate signature dishes.
Rational’s range of accessories enables the SelfCookingCenter to replicate traditional cooking processes and styles. Rational’s grill and tandoori skewers make it easy for chefs to cook classic ethnic kebab-type dishes, such as tandoori chicken or chicken tikka, with the combi steamer closely mimicking the characteristics of a tandoori oven.
Because it is multifunctional, a SelfCookingCenter saves space, in fact it can replace 40 to 50% of standard appliances, reducing the kitchen footprint by at least 30%. It can replace traditional takeaway cooking equipment, such as a rice cooker, BBQ oven, griddle or duck oven, without compromising on taste or quality.
At the end of the day, the SelfCookingCenter automatically cleans itself. The SelfCookingCenter 5 Senses features an upgraded cleaning system, called Efficient CareControl. It uses reformulated cleaning tablets that last 50% longer than previous versions, reducing costs and minimising environmental impact.
The SelfCookingCenter 5 Senses is available in six different sizes, from the six-grid 1/1GN table top model to the 20-grid 2/1GN floor standing unit, which holds up to 40 gastronorm pans.
