At a carvery it is vital that the meat is held and served at the ideal temperature and in perfect condition for the duration of the service. No one wants tough, cold meat with their roast dinner. Foodservice Equipment Marketing (FEM) now supplies Alto-Shaam carvery stations which keep roast meat succulent and hot while reducing shrinkage by up to 18 percent.

Alto-Shaam carvery stations use a special heating system called Halo-Heat. This provides controlled, even heat from the carving shelf surface gently holding the meat at serving temperature without drying out or spoiling. It also retains the food’s moisture and nutrients and increases product holding life.

The units have a fixed lamp (two on the larger model) which provides greater management of surface temperatures. There is an on/off switch and adjustable thermostat for added control. Each carvery station is designed to stand alone or can be used in conjunction with a Halo-Heat cook and hold oven or holding cabinet.

The carvery stations have a screen to help protect the food from germs during service, which is easily removed for cleaning. The cutting board is also removable for easy cleaning, and has a recessed ‘gravy lane’ to catch meat juices for making delicious gravies and sauces.

The carving stations are available from FEM in two model sizes. The smaller station, with a single lamp, has a capacity of 18kg and measures just 466mm (w) x 648mm (d) x 787mm (h). The double lamp station has a capacity of 32kg and measures 660mm (w) x 782mm (d) x 783mm (h). Both have low energy usage.
