Rice is a staple menu item in all sorts of cooking – from Indian and Oriental through to Tex-Mex and Eastern European. But different dishes use different kinds of rice which have slightly different cooking requirements. For kitchens using more than one rice variety this can cause confusion.

Rational’s SelfCooking Center simplifies cooking for a host of dishes and rice is no exception. At the touch of a button, the SelfCooking Center can cook all varieties of rice perfectly as though they had been watched over by an expert. No more steamy pans on the hob and no more overcooked mushy rice.

It really is very simple. All the chef has to do is fill a stainless steel container with washed rice and cover it with cold water using the ratio of between 1.8 (long grain) and 2.5 (round grain) parts water to rice. Then, regardless of the quantity, they just select the steamed rice setting and enter the rice manufacturer’s recommended cooking time. This setting can also be used to make rich and creamy rice desserts.

The SelfCooking Center also has a fried rice mode for preparing pan-fried dishes with precooked rice. It’s best to use a granite-enamelled container for this type of cooking and have about a 2 to 3cm deep layer of rice.

By taking over the cooking process the SelfCooking Center allows the chef time to develop and expand the menu and add different spices for specialist signature dishes.
